What's for dinner tonight -Monday

 We had an informal dinner: Turkey Deli meat, provolone, monty jack, and a mess of deviled eggs.  Also made some whack-n-unwrap biscuits for the boys to use for sandwiches.  

I might be having a post dinner Oreo fest...

Yum, I want your dinner instead of mine! Of course, when my tummy's like this, I want everything until it's in front of me, then I want it in the trash asap!

Chicken enchiladas without the enchilada lol

I used that new Philidelphia Cooking Cream in Sante Fe flavor. I shredded the chicken and added in sauted onions, cheese, and jalapenos. I made the enchiladas for the family and I had a bowl of the chicken mix. It was SO stinkin good!

I had to work tonight so the kid cooked for me. She made me a cheddar-garlic biscuit (with Carbquick... only two carbs per biscuit!) with a sausage patty and microwaved egg on it. (I wanted a fried egg, but she's the microwave-guru so I got a microwaved egg instead. She has a book called Microwave Cooking for One... which has some really interesting recipes, despite being quite possibly the loneliest cookbook ever.)
