Joanne, you and I would get along great! This is so similar to my list!

I also have sliced cheese in a variety of flavors and either egg salad or chicken salad at all times.

Favorite protein snacks include:

Cheese of any kind (nothing fancy - munster and havarti are my current two favorites)
Deli meat (mostly ham or salami)
Eggs fixed any way (always keep hard boiled eggs in the fridge for a quick grab)
Nuts (Trader Joe's sells pre-measured bags of cashews -- I always have at least 1 or 2 in my purse at all times)

A lot of my favorites are already listed... however I Love CHEESE AND CRACKERS. since I don't do crackers anymore I've discovered nuts and cheese.  :) :)  I take a small hunk of whatever cheese (favs right now are gouda and Edam) and put a smokehouse almond on top.  OMG!  I love this!!  you get the lovely cheese flavor and the salty crunchy nut too.  MMmmm!

HI Becky, the foods I rely on for protein / low carb:

Breakfast casserole made with low carb bread
cheese cubes, pepperoni slices, dip with pepper slices
boiled eggs dipped in garlic mayo
rotisserie chicken dipped in mayo or chipotle ranch
Shrimp dipped in creamy dip
strips of bacon dipped in garlic mayo
Chicken strips (breading doesnt bother my tummy)
Tuna salad, coronation chicken salad, egg salad with chopped shrimp or crab added.

hope these help,
yorkie x

Baked tilapia all assorted ways with assorted seasonings but cooked in butter or olive oil.

Shrimp, broiled, fried or boiled. (so easy to just season according to your mood, same like tilapia)
If pre-cooked, a nice mayo based shrimp salad. Same thing with fake crab salad. Tuna, tuna and more tuna.
(someone warned me about the dangers of mercury at work in fish as they warmed up ramen noodles..thanks)

Eggs, chicken sausages, or microwave turkey bacon and shakes for mornings.

Soups and stews with low carb veg and losta meat.

I don't generally eat a lot of beef and chicken, not because I don't like it but I prefer seafood and I can eat a lot more of it with happy intestines.

When I've got the munchies and want to nosh on crunchy carbs like chips:
pepperoni crisps & dip (full fat sour cream or greek yogurt & onion soup mix)
Wasabi Soy or smokehouse almonds
cheese popcorn
butter slathered popcorn
baked low carb tortillas and dip
Jerky & summer sausage are other good savory snack items

For sweet cravings:
Greek yogurt with SF jello cheesecake filling
Ricotta fluff
Amber Lyn chocolate bar (2 net carbs for those not harmed by SAs)
CarbSmart ice cream & ice cream bars
Shaved ice with SF syrup
"milkshake" made with CarbSmart and half & half plus protein powder
Fake Chai latte - DeVinci SF chai syrup and warm half & half (I usually add vanilla protein)
Nectar Apple Ecstacy poured into popcycle molds & frozen
Sugar Free Dove dark chocolate
Adkins Endulge PB cups
Baked low carb tortillas, buttered and sprinkled with cinnamon and splenda
Rockin Roll bars - taste like a Payday candy bar! (these are special treats because they are expensive and higher carbs.)

These require baking, which I haven't done lately but there is also Paula Deen's peanut butter cookies & Low carb cheesecake with SF preserves. Nom.

Just good to keep around, in addition to coldcuts and various cheese:
Babybel cheeses - 2 have 10 grams protein and are easily portable
Garlic stuffed olives from Trader Joe's - jar in fridge at home & work
Adkin's granola bars

I buy a roasted chicken from Costco weekly to have on hand. I put it in all kinds of foods to up my protein content. Yesterday it went into Tom Kai Gai soup (Thai coconut milk & chicken soup) and today for lunch into a burrito made with cheese & a low carb tortilla.

I also start pretty much every day off with a version of Lori's double protein coffee shake and end many days with one as well.
