DS friendly Banana Nut Bread

1 C Splenda
1/2 C shortening
3 VERY ripe bananas

2 eggs
3 T half-half

1 t baking soda
2 C almond flour
pinch of salt

at least 1/2 C medium-chopped nuts (1 use 1 C walnuts)

cut Splenda, shortening and fruit together
fork wisk eggs & half-half, then stir into mash
mix dry ingredients then stir into mash
blow any paper shells from chopped nuts, stir into mash

Grease 9x5 loaf pan
Bake:  300 for 15 minutes, then 350 for 40 minutes

Allow to sit for 30 minutes without slicing it!

If you slice it warm, makes about 8-10. 
If you can wait until it is cool, can make as many as 25 slices.

Carbs: approx 150
  Splenda-5,
  almond flour-40
  bananas-90 (adjust based on your fruit size)
