Hi Gina and everyone,
Hungry, hungry day...feel like I've eaten way too much.

B: bacon, double protein shake
S: double protein shake
L: 1/2 WW thin bun with turkey and Swiss, avacado, 2 small tomatoes, CS fudge bar
S: double protein shake
S: salami and Swiss cheese
D: small piece os Brok's pizza with pepperoni and Italian sausage
S: ?????

Vites: all done. Fluids: more than 80oz
Exercites: 20 min walk.

Sure do like being back into a routine.

Routine is wonderful sometimes. It helps me stay on the straight and narrow.

Don't know what the heck is up, but I have eaten basically the whole house today. Stress eating maybe? No clue.

B - 2 eggs scrambled with the few sausage crumbles I had left, 1/4c cheddar
S - 4 slices deli pepperoni, 3 slices deli salami, 3 slices cheddar
S - 1/2lb bacon, snacked on and off all day
L - 4oz fried panela cheese (I almost let this expire for fear of trying it - YUM-O)
S - big salad w/ lettuce, bacon, cheddar, sunflower seeds, ranch
S - cocoa roasted almonds
S - 1oz beef jerky
D - 1/2lb ground beef, enchilada sauce, 6oz manchego cheese (enchilada bake)
If I eat anything else today, someone should just shoot me!

Fried panela cheese? How did you do it? I tried queso blanco once and it was a major disaster...gooey mess and unedible. I really wanted to try it after Becky's raves.

I can't compare it to queso blanco, because it is not available in any store here, except Velveeta brand, and I have a feeling it's not the real deal.

I was so skeptical to try it, like I said, I almost let it expire!!! I cut it in chunks, around an inch cubed. I had baked some bacon, so I put that grease in a non-stick skillet and put the heat on a little more than medium until it was hot, hot. I dropped in the cubes and waited. I tried to turn the first one too early and it wanted to stick, so I waited a little bit. As it got a bit darker, the outside became more intact. I flipped and repeated. It did shrink and get just a tiny bit melty around the edges but not bad. It was absolutely delicious! I was making it to put on the salad I had made, but when I tried the first one, I decided they would be best enjoyed all on their own and not masked by ranch dressing. I will definitely be stocking up on this!

Definitely do. A round at Walmart is less than 4 bucks, so worth a shot for me. I was pleasantly surprised. I'm thinking you can flavor it up with spices also. Cut it a little thicker and let it get good and brown. To me, it was better than mozzarella sticks you can get as an appetizer, and Im a sucker for those! I don't know about doing great big slices like some do for french toast. I don't like either cinnamon or SF syrup, but I really can't see it tasting good that way! Just me, though. I cut in square like chunks and browned on all sides. The trick for me not creating a mess was having patience to wait until it was crusty enough to not stick.

I have tried the fresco and I did NOT like it at all! That's why I was scared of the panela. If you cook any mexican dishes that need melting cheese, try the manchego too. I had to grate it, as it comes in a block, but it was really, really good. Also good to just snack on when you tire of other cheeses. I'm not really one to try new things, I've very, very picky!
