My carbs were always less than 5g total carbs per meal/snack, so MAYBE 20g total per day max (but minus fiber, and it could be significantly less). Fat does not make me poop, as I have much less malabsorption than a normal DSer (I believe there's an explanation regarding this in my profile, so I won't get into it much here).
The only time I lost more weight than when I was doing that is back in my first 6 weeks or so immediatley post-op. That said, I was still in my first year post-op, so I was still in weight loss mode anyway. Today, I still eat low in carbs in general, but not quite AS strictly (I'm pregnant, so while I still aoid grains, sweets, and starchy veggies, I do allow myself some fruit and some dark chocolate so as not to go insane!), and since I never reached my goal weight, I'm losing a little here and there (about 11 pounds over the past 10 weeks or so, but that's also in conjunction with a couple weeks of first trimester nausea!).
Some snack/meal ideas (fair warning: I LOVE CHEESE):
- protein shakes made using unsweetened almond milk and low carb protein powder
- cheese cubes or slices and pepperoni slices (personally prefer turkey pepperoni, not because of the lower fat, but because they're less greasy on my fingers!)
- rolled up sandwich meat and cheese dipped in mayo and/or mustard
- cheese crisps (preferably cheddar, as parmesan has too little flavor for my liking)
- dill pickles
- deviled eggs
- egg salad
- mini crustless quiches (others call them "egg muffins"): eggs and whatever fillings/toppings (chopped spinach, cheeses, crumbled sausage, crumbled bacon, chopped ham...) you want poured into muffin tins and baked until solid; they refrigerate and microwave well.
- wannabe eggs benedict: over easy eggs over Canadian bacon or breakfast ham topped with hollandaise
- baked chicken thighs marinated in a low-carb dressing and topped with cheese (also with bacon, depending on the flavor of the marinade)
- flavored sausages (check labels for carbs) with alfredo or a cheese sauce
- salad with some greens (I'm very picky about veggies, so usually just some crisp lettuce and MAYBE some baby spinach), chicken, hard boiled egg, shredded cheese, crumbled bacon, and low carb dressing
- ham steak topped with a mixture of honey mustard and mayo (careful with the honey mustard) and swiss cheese, heated until the cheese is melty (mmm, like the inside of a chicken cordon bleu!)

- I eat out a LOT, so any restaurant meat (chicken, steak, pork, fish...) and non-starchy side (usually broccoli, as most places seem to offer that now, or a side salad with creamy/fatty dressing) as long as there's no breading or batter involved
If/when I wanted veggies, I would stick to a small serving of broccoli, cauliflower, green beans, baby/petit brussels sprouts...anything very low in carbs (all from frozen because I'm lazy and don't cook very often), and I would always prepare them with butter, oil, and/or cheese.
