OT: My Trader Joes has discontinued frying cheese- alternative?

I fry up a half-inch slab of queso blanco in butter (or queso fresco? can't remember which it is) from Costco for breakfast.  Cook at med-high till it gets a little brown crust on the bottom, flip and repeat. Add some sliced strawberries and some SF St. Joseph's maple syrup.  MMMM, tastes just like french toast.

I tried frying up some Queso Blanco when I was about 3 weeks out, ended up with the most horrible bloated stomach and liquid diarrhea for most of the day.  It will be a while before I try it again!  I'm still having problems with my jutting hemorrhoids as a result of this episode!
 My  is Jewels.  Love her very much!

Awww, Diane, you poor baby.  Ouchie.  It is so discouraging when something works well for other DSers and not for you.  Been there. Done that.  It's a lot of effort finding you own path on this crazy journey!

I have gotten Queso Blanco at Costco and at multiple local grocery stores (Wegmans, Giant, etc.). I've also seen it at a local international market, but it was surprisingly quite expensive there. I've heard some folks actually find it at Aldi as well.

I was SO looking forward to trying this, but the one time I tried it, it was a major disaster, melted mess. Don't know what I did wrong.
