lol I like corn way more than I should too.  Running out of protein powder is such a pain. I hope your order gets to you soon!

Here's where I am so far. Contemplating something else for dinner. I got up super early (4am), so I got started eating a lot earlier than usual.

Breakfast:
Sue's egg creation - 1 egg, sausage crumbles, cheddar cheese
2nd Breakfast
Sue's egg creation - 1 egg, sausage crumbles, cheddar cheese
Snack
5 slices of bacon
Lunch
5oz sirloin
Snack
Au Gratin Potatoes (they sucked!!! I'm a sucky cook, so I ate very few of them, and tossed the whole pan!!!!)
Snack
Handful of peanuts

Seems like I'm missing something, but here are my totals (all incidentals included such as milk, flour, butter)
Cals - 2235
Carbs - 73
Fat - 160
Protein - 132

Vites - always done

I will edit if I add anything. If I do, it will likely be another 5oz sirloin, since it's marinating already (Cals - 286, Carbs - 0, Fat - 11, Protein - 43)

How did Sue's creation work out? I got sausage crumble today at the store to try it. I love sausage, but since surgery can't cook it without getting sick......can eat it though.

Believe it or not, I struggle with both sausage and eggs!!!! The crumbles were great. It was so easy. I'm not sure what your issues are, but I've not had success with any egg type casserole staying down. Including Brok's pizza. It tastes good, and I so want it to work, but it just doesn't. Same with quiche. Sue's creation worked just fine.

I made one modification. I put my egg in the custard dish first because I wanted to "scramble" it. I whisked it really well, then added about 1/4c of the sausage crumbles, same amount of cheddar. I mixed that all with a fork. Nuked for about 30 seconds, took it out and stirred. Nuked for another 30-40 seconds. I didn't want my eggs to get too tough, as I knew that would not work for me. The egg/cheese was a slight runny (not overly, yuck) but I stirred it again well, and it continued to cook from the heat. It was perfect, and I will be having it a lot. I actually cooked the bacon today to make another, but ended up eating it as a snack. I'm also going to buy the ham cubes I saw of the same brand and give that and swiss cheese a try. I think it will be really good.

Good luck and let us know how it turns out.

Bites look good. You did great keeping the carbs low. I guess it helped to mess up the potatoes. Just think how may carbs are in those suckers.
