Depends on the age....a younger manchego will not grate well. An older one will.

Ha, I was going to say the same thing. Slice it up, drizzle it with balsamic if you like (I have a fig balsamic I like for that). Arrange it on a plate with some nuts (like walnuts or almonds), and some fruit if you eat it.
