My hubby is vegetarian too, although he has started eating fish and seafood (in addition to eggs and dairy), so I suppose he is pescetarian now. I'm not a huge fan of fish or seafood. So, I am right there with you on the interesting mealtimes. Luckily, he can cook - it is a fend-for-yourself kitchen!
