Oh Ann? My Ramen soup experiment
Well, your post got me craving Ramen soup, so this is what I did. I went to my local grocery store up here in the boonies. They often sell shiratake noodles, but did not have them. Oh well, not to be deterred, I bought two packages of the "Oriental" flavor of Ramen. I bought a small head of bok choy, water chestnuts, green onion and bean sprouts. I heated up the broth and added just a tiny smattering of the Ramen - maybe 1/4 of one package, just to make me feel like I was eating noodles. I'm at goal, been there for years, so the hell with it. Anyway, I let those sit a minute or two, then threw in the very thinly sliced bok choy, the water chestnuts and bean sprouts. Let that sit there a couple of minutes until heated through. I served it in bowls with ground fresh pepper and thinly sliced green onions. It was DELICIOUS. My family slurped it right up. One could make this carb-less by adding no noodles at all, or I could have added extra protein by stirring in some mixed egg, or I could have found those damn shiratake noodles.
Anyway, thank you for the inspiration!

Oh yum, I love bean sprouts, but I've never cooked with them myself. I can find shirataki pretty easily here, so I really think I may need to try this.
When I was in New York last summer, I had some real ramen and they actually added thick slices of salted pork on top of the noodles and broth. It was soooo good. I wonder if I could get the same experiece from slices of pork tenderloin. I must try!

LOL - Kayla, I know there's one in San Franciso that's called "What the Pho." For those who are not familiar with Vietnamese food, "Pho" is pronounced "Phuh" in Vietnamese.

Yup - white flour is NOT my friend. So I go for small quantities. Plus, I will gain weight if I go crazy on the carbs, so I keep it low during the week and only go crazy on the weekends, LOL.
