Chicken! That Jenna, I tell ya, she's too damn clever for words. LOL This sounds obscenely good. I bet the boy would eat it & pick out the chicken - and if not, more for me. HAH! I just ate some tuna salad and am so not hungry but reading this made my mouth water.

Thanks a whole bunch for posting this Chad. It's how my family cooks too, so I grok the add ingredient til it looks/feels/tastes right. Going in search of the fire roasted maters. mmmmm

Chad, this was fabulous.  I only got a couple bites off someones plate on Saturday and by the time my drunk hinny made it to the kitchen it was all gone.  I will definitely be making this this week.  Just need to go buy some deli chicken and I am good to go.
