Oh man, that sounds delish!  I always make lasagna with spicy italian sausage (out of the casings, like you).  Here's a question though - what do you think of using a capicola or another kind of spicy italian ham?  I'm not thinking Salami - that would make it too greasy and be a little tougher to cut - but since I'm using the spicy sausage, maybe a spicy ham would complement it?

What are your thoughts?

Hmmm...you know, I'm not sure, Bronwen. I have made this with a lot of different kind of meats but never with ham. It's definitely worth a try though! If you find the right thickness you could use the capicola for the layers instead of the chicken I bet.

I'll have to remember this idea for next time!
