Recipe - Lemon Meringue Cookies

Okay guys, as most of you already know ... every once in a while I "stumble" upon a recipe that I feel is worthy to be shared with you all. And this is another winner in our household. If you try it, I hope you all enjoy it! SF Meringue Cookies are somewhat hard to find and when I have found them, they have not been cheap and some have even been filled with a bunch of additives that I don't want my family eating. If you are able to do splenda, this may be a good recipe for you as well. These are light and airy and seem to be holding up well. Make sure you store them in an airtight container though. Each "cookie" is protein based and basically extrememly low calorie and non fat. My only concern is the amount of splenda in them. But I guess most everything has a price??? Not something I will eat every day, but a nice occassional treat. Hugs, Tammy Lemon Meringue Cookies 1 (3-ounce) package sugar-free lemon gelatin 1 cup splenda 6 egg whites, room temperature 1/4 teaspoon salt 1/4 teaspoon cream of tartar Preheat oven to 250 degrees F. In a small bowl, combine the lemon gelatin and splenda together. In a large bowl using your electric mixer, beat egg whites until foamy. While beating, add salt and cream of tartar. Add the gelatin/splenda mixture to the egg whites gradually (a tablespoon at a time) while beating; beat to stiff peaks. Drop batter by tablespoonfuls onto non-stick baking sheets. Bake 90 minutes; turn off the oven, open the door slightly (secure with a wooden spoon), and allow cookies to cool in the oven. Remove from oven and store in a tightly covered (airtight) container. Yields 50 delicious cookies IMHO

I was in the mood for something lemony! I found a SF lemon pudding and made the mousse on the box. It was good but did not take care of craving. I guess I will give these babies a try. Thanks Tam! How are things going? I am sick right now....I feeling congested and crappy. I am trying to curtail broncitis which is what I get all the time when it starts as a cold! Calling Dr this AM to see what ****tails she can give me! Have a good weekend....I am going to chill! Debbie

Tammy, You're the greatest with recipes. Thanks for this one. I don't know why but Lemon Meringue pie has been calling my name for over a month now. And it was never even a favorite of mine pre WLS. I'll try these this week since I'll have more time ( I think) since I'm not going to be working much this week. I've got m y two grandsons age 4 and 7. Maybe I'll be busier.
