RECIPE - Chocolate Peanut Butter Protein Balls

As promised, here is the recipe for the peanut butter balls that I brought to the meeting last night. Base recipe (sorry, don't have a clue who to give the credit to, as I have seen many variations) Peanut Butter Protein Balls 1 Cup smooth peanut butter, 1 Cup quick rolled oats, 1 Cup protein powder, 3/4 cup honey(optional) I have seen many recipes that add rice krispies, grapenuts, etc. Mix together and form into balls about the size of a walnut. Keep refrigerated. ******************************************* My version of this recipe Chocolate Peanut Butter Protein Balls 1 Cup smooth peanut butter (prefer to use Trader Joe's, Better than butter Peanut Butter, but for the recipe last night, I didn't have it on hand so I just used a regular store brand that had higher protein, lower sugar, and lower fat. Can't remember what brand it was, threw the jar away. Just check the labels and choose your best option. 1 Cup quick rolled oats 1 Cup protein powder, I used Champion Nutrition Chocolate Whey Stack ($26 for a 5lb container online) 3/4 cup honey (optional but helps to hold everything together a bit better and keep them not quite as dry as mine where last night. But I don't like using too much sugar sooo I pretty much avoid this adding about a 1/4 cup of sf faux honey (steel's brand I bought at Carb Busters when they were open and have purchased online since) but I understand that Super Walmart has a good faux honey. Just be careful with the sf honey, it contains sugar alcohols - just be aware if you are sensitive to them - I am big time) When not using Trader Joe's Peanut butter, I prefer a bit more sweetness, so I add some splenda to the mix. Probably about a half a cup is what I used in last nights batch. Mix together and form into balls about the size of a walnut. Keep refrigerated. I divide my recipe into about 24 servings (balls). A bit larger than the ones I brought to group meeting last night. BTW - The fat content can climb up there a bit depending on the peanut butter used, so be aware of those numbers. Here are the nutritional estimates of my version of this recipe. 8.5 gms protein 114 calories 6.5 gms of fat 7 gms of carbs Remember, your nutritional stats are going to vary depending on your particular brand of protein powder, peanut butter and etc. I have thought that adding some dried fruit would be good, but don't want the extra calories at this point. Whew ... sorry for the long drawn out post for such a simple recipe! REALLY - it is an extremely simple recipe. I don't eat these every day, but it is nice to have them on hand. BTW - I FREEZE mine for longer term storage pulling out only a couple at a time and keeping them in the fridge for easy pickins when the snack monster hits me or I need extra protein for the day and not wanting something heavy on my stomach! Tammy, Thanks for the awesome snack. I had 2 PB balls plus the half I ate pre-Nicki wolfing down the rest. MMMMMMM 16+ gr protein. I was pleasantly surprised and sooooo happy to see you and CJ. You guys made my night. Good friends along with good snacks, my kind of party. I loved seeing everyone. The support meeting is getting bigger & stronger every month. I had a few of them for lunch today...YUMMY! Thanks for posting but I guess that means I have to make my own! LOL. They were very good! I was so glad you could come. It really helped to know that there were friends in the audience! Keep up the good work my twin. You will be a size 0 in no time flat! Kick away!
