re: Coconut Shrimp Recipe

This is 1 of my favorites. I loved this in Hawaii. * 1 lime * 2 teaspoons of choped fresh jalapeno peppers (finely chopped) * 1/2 cup pineapple or peach preserves (I used Pineapple) * 1 pound uncooked shell-on large shrimp (Trader Joe's) * 2 egg whites * 2 tablespoons cornstarch * 1 1/2 cups sweetened flaked coconut In a small bowl combine lime juice, jalapeno pepper and preserves; mix well. cover; refrigerate until ready to serve. Pre-heat oven to 400; line pan, stonewear, cookie sheet with parchment paper. In a small bowl beat egg whites on high speed with an electric mixer until soft peaks form. Place cornstarch and coconut on two separate plates. Holding shrimp by the tail coat shrimp with cornstarch. Dip shrimp in eagg whites then in coconut to coat. Arrange in a single layer on baking pan Bake 16-17 minutes until edges of coconut are deep golden brown. Turning once after 8 minutes. Serve with your sauce mixture. 3 shrimp with Tablespoon of Sauce ( I did not eat much sauce, the shrimp was tasty enough for me.) (This coming from the girl that used to devour at least a pound of shrimp by myself.) Gotta love this WLS. 18 grams Protein Let me know what ya think!! ((hugs)) Elissa
