Taco Soup Recipe

I have seen recipes for this taco soup a lot, so I finally decided to give one a go ... with some slight alterations to suit my family. And we found that we love it, so I wanted to share it with those that may be looking for a change of pace. This one could not be easier, well yes it could, you could use the frozen chopped onion I guess , but anyway, we really like the simplicity and the zip of this one. Don't know about all of you, but I have certainly noticed since surgery, I prefer a bit more spice? Anyway, if you try it, I hope you enjoy it as much as my family has. Taco Soup 1 lb Ground Beef (I also use a mixture of pre-cooked roasted chicken and ground beef - whatever I have on hand that needs to be used up) 1 chopped onion (I use a sweet one) 2 14.5 oz cans diced tomatoes w/green chillies 1 15 oz cans pinto beans 1 15 oz fat free refried beans 2 15 kidney beans or black beans 1 15 oz corn (creamed or plain) 1 dry pkg ranch dressing mix 1 dry pkg taco seasoning mix Brown ground beef with onion. Drain. Add everything and simmer for a half an hour or so. I garnish with fresh chopped cilantro The family adds, cheddar cheese, sour cream, and either corn chips or tortilla chips. I usually throw in a pan of corn bread (Johnny Cake) for the family when I make this also (love to sneak a piece of it) Anyway, we simply LOVE this soup!!! It is so easy and so tasty. And the recipe is easily changed if you don't happen to have something listed, just use something else. I do that all the time, but this is the base recipe that I follow. For me, soup recipes are a real plus ... soup is something that I can pretty much always count on sitting well, and this one is really nice, because it has a lot of kick to it. Nice change of pace! Hi Tam Tam, . This sounds awesome. I have to admit I always liked a little zip in my food and I do enjoy it still. As long as it isn't toooo hot. Can't drink to calm it down any more I guess. I use the buffalo burger from Trader Joe's. It has 39 gr of protein in it. I'll try it and let you know how it tastes. You gotta love all that protein plus the added protein of the beans. I agree that soup is a safe food for me too. Especially when I am out for a meal. Hope to see you soon chickie. Elissa

Hmmm...Change for the taste buds! I am game! Getting bored with alot of things these days. I love corn bread too! Dad made it alot when we were growing up. I think I will try it this weekend. It looks easy enough that a novice like me could make it! Hope all is well with you and your children. Your twin Debbie

THE SOUP IS A HIT! THANK YOU!!! I MADE IT AND FROZE SEVERAL CONTAINERS FULL, SO ALL I HAVE TO DO IS HEAT AND EAT. THANKS NICKI PS I PUT IN A CROCK POT AND SIMMERED ALL DAY.

So glad you liked it Nicki. We really like it also ... I was not sure before seeing the title, cause I am not a huge taco fan, but truly this was a real hit with me also.
