Recipe - Mock Cream Cheese Danish
Okay guys ... I ran across another keeper in my book!!! I made some changes to the original recipe to suit my personal taste and have found this one to be a real winner. It helps me get in eggs (protein) which is a food that has been a struggle for me from the beginning. I have also made this for dinner before.
***Mock Cream Cheese Fruit Danish***
1 egg
DaVinci Syrup (I use French Vanilla) or vanilla extract
a bit of splenda
Pulse in my newfound Bullet (LOVE IT FOLKS - it is THE BEST) But I think you could use a small chopper or blender as well.
Add 3 oz of ff cream cheese to the egg mixture and pulse leaving some "chunks".
Put into a microwavable dish that has been seasoned with Pam. Microwave until eggs are set.
I also add blackberries to my "danish". I just take a few berries and add some splenda and nuke them. Then pour this mixture in the middle of the egg mixture. You can do this either before or after you cook the danish. I like it both ways, but prefer to add before cooking the danish, although it does take a little longer to microwave this way.
The texture of this dish is a little bit "eggy" - the flavor is truly Cream Cheese Danish. This is a great breakfast treat in my book!!! Very filling and very satisfying!
21 gms of protein per serving using my particular ingredients
about 180-190 calories.
All in all, this recipe only takes me less than 5 minutes to make. SO EASY!!!
The original recipe said you can add cinnamon and vanilla to the batter for a "French toast" type treat. The combinations are endless!!! Imagine this with some nuts??? Yummy!!!

BTW - side note about the "Magic Bullet". I have found that the Bullet helps to make everything so "light" and easy. Perfect for our size shakes. And it is so little and takes up so little counter space. And it is SO EASY to clean up!!! This truly is one of the BEST finds I have found since surgery. It has made my life so much easier!!! Gotta say ... I LOVE IT!!! If interested, you can purchase them right now at Target and BJ's for 49.00. I'll have to try this..and that magic bullet..well..I'm going to have to check them out at target!! How many ounces does it make for a protein drink?

Hey, have you ever had the Nappa Cabbage Salad. I love it..made some last night..but I dumped..but I don't know if was from the 1/4 cup of sugar in that or the bit of fruit salad I had later. I haven't thrown up in ages..and was shocked.
I'm wondering if I could use splenda in salad..and maybe that would be better. I'm guess it was that..since I haven't had it since before surgery..and have had some fruit salad.
This is the cabbage salad with the ramen noodles, toated almonds, nappa cabbage, green onions, peanut oil, rice vinegar and th 1/4 cup of sugar.

I don't see why you could not use splenda in lieu of sugar ... the recipe calls for vinegar doesn't it? I think it would work. I have a similar recipe that I use splenda in instead of sugar. Think you may like it also. I will find it and post it at the end of this message just in case you want it. Now about the Nappa Cabbage Salad ... I have never had it before, but boy it sounds really good. Made me want to run out to the grocery and get the stuff to make it right away. But decided to hold off until next week. But thanks for the info ... think I will try it sugar free to see how it goes. Will let you know if/when I do.
About the throwing up, do you suppose it could have been a combination of the Nappa Salad with the fruit? I got hit not too long ago also, really surprised me also, as it had been quite a while for me also. But to be totally honest, I was glad that I did ... it helped me to remember that I still have a tool and I guess it is still working. Even though some days I am not so sure.

Oriental Cabbage Slaw
1/2 cup sesame seeds
1/2 cup slivered almonds
2 tbsp butter
1 head napa cabbage-shredded
4 chopped spring onions
Saute sesame seeds and almonds in butter. Add this to cabbage and spring onions. Refrigerate.
Dressing
Mix:
1/3 cup red wine vinegar
1/2 cup olive oil
8 packs splenda
2 tsp salt
1/4 tsp pepper
Pour over salad and serve
Serves 8-10 (reg sized portions)
Each serving - 9g carbs, 4g fiber

I am so glad you were able to grab up one ... albeit the last one!!! Truly this is the best gadget investment I have ever made. I LOVE MY BULLET!!! I use it for just about everything these days.
BTW - are you using whole flax or oatmeal in your shakes??? If so, check this out. Throw the flax/oatmeal into the cup and "grind" until the consistency you like ... then right on top of it throw in your ingredients for your shake. So easy ... no mess ... fresh flax!!!

I'm envious that the last bullet was bought! We've been trying to afford one before my surgery, but so much else has to be taken care of first! I was stoked to hear a half-price deal at Target. Did they say whether they'd be stocking more at the sale price? Or, do I need to try to find a friend with a BJ's membership? We're only members of Costco! One hundred dollars seems a bit steep right now, but I know we can swing fifty! (Heh, or less...Rob seems LUCKY to me!)
