Easy Sugar Free Cherry pie 2 cans of Comstock Cherry pie filling with Splenda 1 box of refrigerated pie crust Microwave the pie crust for 20 seconds and roll it out in the pie dish. Open both cans of cherry pie filling and put into crust. Put the top crust on & make the sides fluted & pretty. Make about 5 slits in the crust. Heat oven to 400 for about 10 minutes, then turn it down to 350 for about 40 minutes or until crust is nicely golden brown. Cool & enjoy. Sugar Free Sweet potato Casserole 4 cups not too mashed sweet potato's ( 3-4 lbs) 4 tablespoons of butter (room temp) 1/2 cup Sweet & low brown sugar 1/2 cup evaporated milk fat free 2 eggs (well beaten) 1/4 teaspoon nutmeg 1/4 teaspoon cinnamon 1 teaspoon vanilla 1 (8 oz) can crushed pineapple with juice 1/2 cup pecans (optional) 1 cup minature marshmallows for topping (optional) Peel & boil sweet potato's until tender, drain off water and gently mash. I left some chunks. Add butter while potato's are still warm. Stir in sugar, milk, eggs, spices, vanilla, pineapple and blend. Then I added in the nuts. Bake at 350 for 30 to 35 minutes. Add marshmallows the last 15 minutes. This makes a nice size casserole, enough for 8-10 normal people. Can cut in half for the same amount of us WLS people. Happy Holidays ((HUGS)) Elissa
