Spaghetti Squash

My friend Lynn sent me this recipe, thought I'd post it because it seems like everyone always wonders what to do with the spaghetti squash besides mixing it with sauce. I haven't tried this yet but it sounds good. Spaghetti Squash Patties A pancake without any starch, these little gems make great side dishes. You can dress them up with all kinds of sauces or dressing, but sometimes they are nice simply cooked in olive oil and sprinkled with a little salt and coarsely ground pepper. 6 Cups spaghetti squash, cooked by your favorite method and separated into strands (follow link for instructions) 4 eggs ( this sounds like alot to me, I will probably reduce to 2 eggs. Might be too wet ) 2 Tbsp. chopped green onion or chives salt and pepper to taste oil for skillet Makes About 30 Patties Add eggs, onion or chives, salt and pepper to cooked spaghetti squash. Form into 3 inch patties. Heat oil in a skillet and cook for 3-4 minutes on each side. For a different flavor, you can sauté the patties in butter. For an Asian flair, sauté in canola oil mixed with a few drops of sesame oil, serve with soy sauce. Linda

Thanks Linda!!! I've been so craving squash..I eat it a lot these days..after my protein of course! Most of the time I slice it up with onions and put it on my foreman grill. ...Yummy! and no grease! Hugs! Kimberly

Linda, Sounds awesome! I've printed this out! YUMMMM! I tried squashing well-cooked cauliflower tonight, added a bit of cheese. I know it's early, but I was craving veggies and the thought of pureed...UGH! I then chewed it very well and I think it decided it was ok! Talk with you soon! Valerie
