Okay - this may be just a personal taste thing but I just thre this together & it is yummy. I was thinking abotu ChiChi's for some reason & when I am there I almost always get a seafood chimichanga. I can do mexican types foods - taco, etc pretty well. SO I came up with this & while not exact it is kinda close in taste. Soft protein too for newer pouchies. You could of course change the filling if you don't like the seafood taste but to keep it easy on newer pouches I would go with finely ground chicken or turkey or beef. you could try shredded but I would go as far as mincing the meat after shredding it to make sure it is small enough to pass through your new stoma & still make a white gravy type sauce on it as that will keep it very moist. Kathy's seafood delight okay - maybe I have a little too much time on my hands... 2 tbs soft margerine melted in pan, sprinkle in garlic salt & peper to taste can always add more later in the process Add tbs flour (more or less can be used for preffered thickness of sauce) Add about 1 cup skim milk & stir contantly until sauce thickens. - can add more or less milk to adjust thickness as well. I went for a medium consistancy. 1 cup imatation crab meat - chopped up - add to sauce. Taste & at this point add more season if you want to. take a small flour tortilla & spread 1 side with the light margerine spread (for those that are more calorie concious - remember I am not right now... you can use that butter flavored cooking spray on 1 side instead.) on the non-greased side add about 1/4 cup of your favorite shredded cheese - I used a combination of cheddar, mozzerella & provolone. on top of that add about 1/4 c of the crab mixture. fold the ends on 2 side into the center so it overlaps & lay it seam side down in a dry non stick pan over low/med heat. let one side brown & gently turn with spatula to brown the other side. You can also roll it up on it's edges to brown the sides if you want - enjoy... I have NOOOO idea the calorie or protein contents but I figured with milk, cheese & the imitation crab meat there is probably at least 12 or so grams of protein. There should be 8 from the cheese alone in each one and the tortillas I use actually have 2 grams of protein from somewhere too.
