Okay guys ... I think I may have something worthy of sharing. I have been craving chocolate so I went on a search for a legal fudge recipe (without malatol and the wonderful gastric symptoms that can go with it). Anyway, I tried this recipe today and think that it is pretty good ... it certainly took care of my sweet tooth and chocolate fix. BTW - it is OHHHHH soooo easy to make!!! If you try it, let me know what you think. SUGAR FREE CHOCOLATE FUDGE 16 oz cream cheese, softened (I used the fat free) 2 unsweetened chocolate squares (1 oz each) melted and cooled (I just popped mine in the microwave for about a minute and it was perfect 1/2 cup of sugar substitute (I used splenda) 1 tsp vanilla extract 1/2 cup chopped pecan (I didn't have these so they are not included in the calorie count below) In small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans (if using them). Pour into a 8-inch square baking pan lined with foil. Cover and refridgerate overnight. Cut into 16 squares. Served chilled. Nutritional Count per serving (16 servings per recipe - made without the pecans and made with the fat free cream cheese) 13 calories, 1 gm fat, 1 gm carb, 1 gm protein I think I will try it next time and up the protein by adding protein powder. If you should try it first please let us know how it turns out. Best wishes and enjoy!!! Tammy Side note ... I found Splenda at Costco (2 equal to 5 lbs bags) for $10-$11 ... I was thrilled with this find!
