Protein Power Diet Soup Recipe

Hi Everyone, 3tbs olive oil 3 cloves of garlic 1 1/2 onion 3 cups ea zucchini and yellow squash,sliced,or 3 cups frozen mixed vegs 3 cups diced cooked chicken or 3 cans chiken,drained 2 cans diced tomatoes 3 cans season chicken broth 6 cups fresh baby spinach or 3 cups frozen chopped spinach, thawed and squeezed dry * in a large sauceoan over medium heat, add oil,garlic and onions:coo****il onions are transparent and beginning to become golden. Raise heat to medium high,add remaining vegs except spinach and coo****il tender * add chicken,tomatoes and broth,bring to a boil. Reduce heat and simmer for 10 minutes. add spinach and coo****il just wilted makes 6 servings, Per serving 269 cals, 25 g.protein,14g fat,(3g saturated) 62mgchol,11g carbs,1498 mg sodium,5g fiber and 2g sugar. Hi Debra, I made this and it was pretty good. I didn't have any spinach so I left that part out. hmmm wonder what this would taste like using beef? Linda

Debra, Thanks for the recipe. I am preop and trying to lose weight for my life skills class. I will make this for sure both now and after surgery. Got any more good ones. Kathleen
