Manhattan Style Clam Chowder

Cleaning out my cabinets today and came up with this. If you don't have problems with tomatoes give it a try. It was really fast and quite good. 2 14. 4 oz cans Italian style diced tomatoes 2 10 oz. cans whole baby clams 1 can carrots diced ( I was out of fresh so I used these, fresh and and less of them will be better for next time ) 1 5 oz potato ( and yes I did weigh it lol ) about 3 tbsp bacon bits ( I figured much lower fat friendly than real bacon and I really just wanted the hint of the flavor anyway ) 2 small stalks chopped celery 1 cup Spicy V-8 ( this is the secret ingredient! ) aprox 2 tsp oregano smidge of garlic salt black pepper to taste 1 tsp-ish basil All this into a pot. Bring it to a boil, lower the heat. Cover and simmer about 30 minutes and you are good to go! I figured out the nutritional info as follows: Makes aprox 9 8 oz servings 102 calories 2.3 g fiber 7.5 g protein ( yaaay ) 6.5 g sugar ( from the tomatoes) 13 g carbs (11 if you deduct the fiber )

Linda, MMMMMM. sounds great. I love Clam chowder. Got everything except the clams. As soon as I get my butt in gear, I'll get some and make it. How's it going? I missed everyone at the meetngs. I'll see you all next time around. Elissa
