Ok Patti....you can stop reading this right now and come back this weekend lol
The other day I peeled and diced up and cucumber into very small pieces added green pepper ( also diced ) and a firm roma tomato. Firmer was better so I could control the size of the pieces.
Threw all that in a tupperware bowl and added some Nakano Red Pepper rice wine vinegar ( if you aren't familiar with this brand it's very good and they have several flavors ) Let the whole thing sit to marinate.
I have used this as a base for a quick lunch the past 2 days. Yesterday I scooped out 1/4 cup onto a plate and added a few oz's of shrimp on top and sprinkled with Old Bay.
Today i did the same thing but cut a string cheese into small rounds and some deli roast beef, rolled up and cut into strips. It was quick, easy. no heating up the kitchen and gave me anywhere from 16 g of protein for the cheese and beef, to 22 grams for the shrimp. Plus some much needed fiber.

Oh yeah. getting in the fruit too yumm!! just had some watermelon, blueberries and strawberries this morning! And right now actually I am having my salad. Of course there is more cheese and turkey cubes and shrimp and red beans than anything but I have my spinach leaves and my cucumber which is sooo yummy. I can stomach veggies very well it seems. Well...I can tolerate everything just about quite well which is actually a little bit of a disadvantage. But its so much easier to control. I want this weight off off off so no more cheating for me...Isnt it great that "cheating" is only like 5 chips now remember when it was a BAG of chips!!! BEFORE surgery we would have eaten 5 chips and been like "wait...hold on did I eat something just then??" then ice cream and more chips ... (5 chips) MAN I love this surgery!!!
