Cooking Class Was Great

I completely enjoyed the PMRI gastric bypass cooking class I went to this evening. It was very entertaining, informative and delicious. Mm we got to eat the fruits of her labor lol. Julie Walenta gave the demonstration and she really made me laugh at some of the things that happened ( over full blender etc ) She did an Asian theme tonight and we learned to make Thai Shrimp Rolls With Spicy Peanut sauce.oh my can you say yum yum, it was very good. Lettuce wraps made from turkey, ****ake mushrooms, water chestnuts etc. This was also very good and would make an awesome filling for potstickers. Im planning on adapting it for those. Orange Sliced Salmon with Spaghetti Squash. This too was simple and very delicious, you got a lovely POP of orange flavor in your mouth when biting into it, very nice mixture between a semi sweet and a savory. Last but not least some fortified fudgsicles using cottage cheese! very original and quite good. I give the teacher an A+ and would love to sign up for another class in the future. Linda

Wow! Sounds delicious!! Especially the Orange Sliced Salmon with Spaghetti Squash! So, I'm curious..what was the nutritional count on this? Can you share the recipes on the recipe board? Speaking of oranges...can we have them or can't we? I've heard both. Is it the juice or the rind we have to beware? 'Cause Acme has them on sale (buy 1 bag, get another free) right now and the smell of them is wonderful! I miss my orange juice, too. (((hugs))) -Karen

Hi Karen, I will be posting the recipes on the MSN site later this evening. As to your question about the oranges it's my understanding that the juice is the culprit because of such a high concentration of natural sugar, however eating a portion of the whole fruit isn't as much of an issue because the fiber helps with metabolizing the sugars ( my training as a diabetic comes in handy now lol ) I find this to be true after testing my blood sugar after a whole fruit vs. having just the juice. I would go ahead and try the orange and see how you do, it's not like you will be able to eat an entire orange so I would think a few sections of one as a serving would be fine as long as it doesn't make you dump. The class was given by Julie Walenta, she is the same one who did the support group meeting awhile back when the topic was sugar. Several at the demonstration were concerned because she used sugar in several recipes, she explained ( once again, poor girl lol ) that it is such a small amount spread over such a large amount of servings that it comes up to be a really minute amount we are actually eating. Look for the recipes!
