Need support group and food advice
Hi all I am new to both surgery and this site. I am looking for a support group or just support with my weight loss journey. I had surgery on July 25th and so far I am happy with my results, the problem is that I just had my first fill today 9/29/11. Prior to this fill I was eating what I think was more than I am supposed to. I also need some recipe advice because I am definitly tired of eating the same thing over and over again. Please help me before I CRASH!
This is one of my favorite recipes! My whole family loved it and didn't even know it was healthy!
White Chicken Chili
Cooking Spray
2 pounds boneless, skinless chicken breast cut into bite size pieces
2 Cups finely chopped onion
2 cloves garlic minced
2 tsp ground cumin
1/2 tsp coriander
2 cans (4.5 oz each) green chilies, drained
1 Cup Water
1 can F. F. less sodium chicken broth 2 cans of Cannelloni beans( white kidney beans)
1.2 tsp pepper sauce
1 cup shredded Monterrey jack cheese (or Mexican blend cheese)
1/2 C chopped fresh cilantro
1/2 C chopped green onion
Heat a large dutch oven or pot over medium high. Spray and add chicken, cook till cooked through stirring frequently. Remove and add onion and saute 6 minutes stirring frequently. Add garlic and saute 2 minutes. Stir in cumin and coriander, add chilies. Reduce heat to low and add in chicken, beans and broth. Bring to simmer, cover and cook for 10 minutes. Top each bowl with cheese and green peppers.
Calories: 233
Fat 5.9 grams
Fiber: 3.4 grams
Protein: 32.7 grams
Another great one is:
Baked Ricotta
16 oz. Ricotta
1 egg
1/4 c. Parmesan cheese
sprinkle of pepper
sprinkle of dried parsley
Mix all of this together. I use a glass pie plate. Put a thin layer of spaghetti sauce on the bottom of the plate. Next add the ricotta mixture, flatten out.
Add with more spaghetti sauce. Top with Mozzarella cheese.
Bake covered for about 30 min at 350'f. Remove cover, bake a few minutes more. Also easy to microwave, just doesn't brown.
I serve this with steamed vegetables.
Will also work as a filling for a squash or eggplant casserole. Just layer.
Finally, we have a great support group that meets the 3rd Tuesday of every month in the John Ammons wing of the Christiana Hospital. Guest speaker starts at 6pm, support group meeting starts at 7pm to 8:30pm.
Come late, leave early, its all good!
