Recipe: Trying to Stay Cool Lemon Mousse!

Stay cool and stay hydrated!

LEMON MOUSSE

One 4-serving size pkg. instant sugar-free vanilla pudding mix
2 cups milk
1 tub Crystal Light Lemonade or Sunrise Orange - dry (the tub that makes ONE pitcher)
One 12-ounce container Cool Whip OR 3 cups Splenda-sweetened whipped cream
1 1/2 cups fresh blueberries, optional

In a large bowl beat the pudding mix with the mil****il thickened and smooth. Beat in the dry drink mix. Fold in the Cool Whip or whipped cream and berries. Spoon into individual glasses and allow to set up for at least one hour. Makes 8 servings.

I so want to try this......got to go back to the food store.....it sounds so yummy.

This sounds yummy. Try pistachio sugar free. It has a minty flavor. I add 8oz low fat ricotta cheese and whip it. More protein and refreshing. ((HUGS)) Elissa
