What are you barbequing this weekend.....

I am hoping to barbeque all weekend.  This year, my daughter and I discovered that we absolutely love grilled vegetable kaboobs.  

To make them we use small portabella mushrooms, green and red pepper, onion, summer squash and zucchini.  I spray them lightly with Trader Joe's olive oil spray and cook on the grill.

We also found Dr Prager's vegetable burgers at Trader Joes that are really good...especially with a slice of melted swiss cheese on a whole grain hamburger roll.

We have also grilled the large portabella mushroom tops.....so yummy.

And of course for dessert......something we discovered last year.  We grilled peaches on the grill.   I sliced the peach in half, removed the pit and grilled on a low heat.  It tasted like peach pie without all the calories and fat.

 My husband, son and I are going to my cousin's house for the 4th.  Not sure what they're serving, but I'll be bringing a side dish called Lemony Quinoa. I found the recipe on www.allrecipes.com. The recipe calls for chopped celery, chopped red onions, cayenne pepper, ground cumin, parsley, pine nuts (I'll substitute with almonds) and lemon juice.  Quinoa has become my new favorite whole grain.  So versatile.

Nina...this sounds good.  I am going to have to try this.  I have gotten some good recipes from that site.

 Interestingly, I didn't even know allrecipes.com existed until 5 years ago, when my (then 21 year old) son introduced me to it.  He'd been searching for something nice to cook for his girlfriend when he came across it.  I've been a fan of it ever since.

Rosey, try sliced pineapple on the grill also. YUM!
I love to grill also.  I'm going to try the peach, sounds delicious.

Hi Judy.....the pineapple sounds good.  I will be trying it hopefully this weekend.  Another fruit we tried was apples.....apples were just okay.  The peaches were awesome.

Pineapple is awesome!  My whole family loved it.  I grilled ham steaks but it would also go good with grilled chicken.

 I'm grilling nothing, but I am looking forward to having some egg salad-y stuff on Sunday.  Should make me not be envious of those having deviled eggs. :)

Hi Joe.....I just realized that you are a newbie.  I had trouble with eggs in the beginning.  Be careful,  eggs fill me up really fast even now 6 years later. 

You could make a great peach smoothie with skim milk, vanilla unjury, a ripe fresh juicy peach and ice. YUMMY .......I might make myself one this weekend.

 Yeah, I've been taking it easy. I'll test a little bit well pureed.  A moist scrambled egg was good before...I don't know if I'd react differently to eggs prepared another way.
