Tonight it was fish. Bought a pound of tilapia and had it oven fried. Simple enough to do - dredged it in flour then dipped in a beaten egg and then coated with a mixture of panko bread crumbs, corn meal and Old Bay seasoning. Put it on a greased cookie sheet and sprayed the fish with Pam and then baked at 425 for 10-15 minutes. Had some ****tail sauce with it and it was great!
We haven't had fish steaks (tuna, mahi mahi, etc) lately. I usually marinate them in olive oil with salt and pepper and then grill them. Squirt some lime on it as soon as they come off the grill and serve immediately. It is plain, but very good. We really like salmon filets and that is usually cooked on the grill on a cedar plank and sprinkled with an Old Bay rub (they seel it at the seafood counter and it is coarse Old Bay with brown sugar - I sometimes mix it up myself with plain Old Bay and brown sugar). If I am lazy or the weather is really bad I will cook it in the oven.
Now I've gone and made myself hungry. Good thing it's time to head to the basement and work out. Have a good night!

I am still here, lurking as usual . . . very depressed about my inability to get my winter weight gain back off. I no longer have health insurance so going for a revision is out of the question. I struggle with having no restriction . . . and sugar doesn't bother me . . . each day is a real struggle as I feel like the food I take in goes right through me, I never feel full. For the first time since my surgery (almost 6 years ago) I really "feel" fat and self-conscious about it again.
Work is picking back up, thankfully, so maybe they'll be enough left over so I can make some better choices with my food budget.
And, hopefully as it begins to warm up around here, I will get motivated to walk outside, etc. I did get my treadmill dusted off and have logged a few miles on it . . . but not nearly enough hahaha.
