Mike I had turkey scapple lately. Wasn't bad but not as good as Rappa. Don't know if you get it up north but Hugh's makes a homemade scapple. It is very, very good. The farmer we work for : His son goes and gets it right from the factory about once a month. The best ! I think all is good if cooked right. Crispy on the outside and soft inside. See you lighter. OMG I love scrapple. I eat Rappa and sometimes I get a small piece from Booth's Corner Farmer's Market. One small piece cut kinda thick, coat it in flour and put a little oil in a cast iron skillet. Get it hot before I put the scrapple on and fry for about 5 minutes each side and voila brown & crispy outside and soft inside. Top it off with an easy over egg and mmmmm, my breakfast on a weekend morning. 1/2 piece of toasted rye maybe. Does a body good to be able to eat what you like. I then take the rest of the scrapple and coat it in flour, cover each slice in waxed paper and put in a baggie and freeze. Take out as you need it. Lasts for at least a month in the freezer. Enjoy!
