Another beautiful day in Delaware - hopefully everybody will have a chance to get out and enjoy some sun and warmth!  Another meatless Friday for me so getting protein will be tricky.  Already had three eggs for breakfast.  Looking forward to some oven fried swai for dinner tonight.

This will be the first weekend in a while where I didn't have plans that kept me away from the house.  It will be nice to have a weekend where I can get some work done outside and open up the windows and air out the house.  I do have 15 gallons of beer that need to be bottled this weekend and another 10 gallons that need to be transferred (I don't drink the stuff, I just brew it ).

Anybody doing anything special or neat this weekend?

 What is swai!  I've never heard of it.  Where do you get it? How much protein per serving?   Happy Friday!

Swai is a lot like tilapia , in my opinion.  A mild white fish.  It has 13g of protien and 90 caloris in one 3.5 ounce serving.  It basically takes the flavor of whatever you bake it with.  My kids love it , too - which is a bonus.

The worst part is we'll get a refund!  I just hate to get everything ready.

Swai is a catfish  farmed extensively in Asia.  Excellent source of protein and omega 3 fatty acids.

I have bought it at Safeway and Pathmark but I would guess any grocery store with a fish department would carry it.

Last week I made fish tacos with it (just cut it into cubes adn cooked it in some olive oil and taco seasoning) and my family loved it!

 I generally shop at SuperFresh or Giant and couldn't find the fish at either store. I'll have to check at the ShopRite.   I am determined to find this fish.  LOL

It was a beautiful weekend! Today, not so much.....I ended up cleaning out a few garden beds and mulching before my head cold took over . I hope though that after this rain goes away that I will be able to get the rest of the beds done this week.
