What's for Dinner?

Since the board is slow I thought I would start a new topic. So here it is ! What's For Dinner ? Today I am not cooking for last night I made plates for the kids with the left overs. They have Baked chicken, 3 cheese potatoes and corn. I am having Debbie's left over chicken and eggplant parmagian. Maybe a veggie but not corn for me. I love these steam fresh veggies they have today. Harris Teeter has a brand called " Allen's Steam Fresh" . They have them on sale about every 3 weeks at buy one get one free. They are on sale this week so I will stock up. Ok what are you cooking ? See you lighter. Joanne

I know you posted this on the 3rd, and my follow-up post will be dated the 5th...weird how that works.  I will post what we ate for dinner the 4th.

I get several items from Schwan's.  They are a little pricey but the items I buy are so delicious and fully prepared.  I get their chicken drummies and make hot and BBQ wings.  We had baked beans and potato salad with them. My fryer shut itself off when it was time to cook my 4 pcs., so I was a little disappointed, but Ed enjoyed his hot wings.  Before I cooked his portion, I had dropped the last 6 little cod nuggets in the fryer just to get the mostly empty bag out of the freezer.  So I had already eaten the fish prior to the fryer quitting on me.  I ate a huge portion of beans and a couple of bites of potato salad and was real full. 

Tonight we are having baked Mahi-Mahi Casino(wrapped in foil with garlic butter), with either green beans or corn.  Neither of us handle potatoes real well as far as mashed or baked....they just make us both real full, so we usually forego the potatoes as a side.  I have some sugar free rice pudding we can eat later on if we want.  We both love the Mahi-Mahi so it will be yummy.

Kathy, I saw the Schwan's truck in our neighborhood this weekend . . . where can I get more info about their selections? Now that I'm working I am really hating coming home and having to cook for the family , and then clean up the kitchen, etc. . . . I am cool with popping in a Lean Cuisine for my own dinner, but the kids still have to eat ha-ha . . .

BJ, You can always get out there and flag him down  ! LOL ! Maybe he is cute and single ! Ok , if you don't want to go there I'm sure Kathy can give you the hook up. They do have alot of good prices but are pricey like Kathy said. Personally myself I love crock pot cooking. It is so nice to come home and di**** up and clean only one pot. I have to admit my grandkids have eaten alot of pot pies and hot pockets lately for dinner. I eat alot of Debbie's left overs. I'm so grateful she hasn't learned to cook for 2 yet. See you lighter. Well, I could kill two birds with one stone that way, huh? Flagging down the Schwan's man would entail the *exercise* of chasing him down the road, thus burning some calories.

I do have a crush on our FedEx guy, ahem.

Not too many cute/single men down here in Long Neck, that's for sure.

BJ, I remember reading not that long ago about someone hooking up with the fed ex guy. They must all be cute hunks. All our hospice meds come fed ex but our delivery person is a woman. How did you get lucky with a man. Just kidding ! This woman is very nice. See you lighter. Joanne

with all this "extra skin" flappin' and clappin' I would probably scare the heck outta somebody.

He is married and has some rugrats. Sorry. LOL.  He comes around every two weeks...He will be around again on the 17th.  You can go to the schwan's website and order online...they have discounts for online orders too.  The food really is good, almost everything is fully cooked and all you do is microwave, bake or deep fry.  They have cool kids foods too  Check them out.

Kathy,  What is Mahi-Mahi ? I think fish but not sure. Ok you have to give us recipes. Did you make the sugar free rice pudding ? Since you cook for a living maybe you could do a post on the recipe of the day or week ! We miss when you don't post for you are so inspirational !. See you lighter. Joanne

Hmmm . . . trying to avoid going grocery shopping today because I am a football nut and don't want to miss today's Redskins matchup with the Eagles . . .

I have this huge family-sized tray of boneless chicken breasts that somehow got stuck into the freezer before I broke it up into meal-sized portions. So I'm thinking about thawing it out and making several things with it:

-chicken salad for my lunches this week at work
-chicken & rice dish for tonite's dinner
-other casseroles?

Here is my question to you cooks -- how do I go about freezing a chicken-noodle-type casserole? How long will it keep in the freezer? I am hopeless in the kitchen if you haven't noticed LOL.
