Wednesday Roll Call

Good Morning Delaware !  The weather is kinda cool in Lower Slower Delaware this a.m.  I took my son to work and was tempted to put on the car heater. You know we stay cold anyway. We may need to bring out the fleece blankets sooner then we think.  Bob went to sleep Sunday night and didn't wake up until yesterday afternoon. I did manage to give him a shower and myself a half one. He ate and drank very little and went back to sleep. I think his time is coming soon to be with the Lord.  As much as it pains my heart I know I have to let go.  Debbie had a bad day yesterday so please continue to keep her in prayer. Dealing with the kids is the hardest part. Alexus keeps telling me to take Poppi to the hospital.  On a good note Lorretta had her surgery yesterday with no complications and is home doing well. I will spend today going thru clothing to get rid of.  I didn't realize I had so much but nothing to wear. I have to let go  there too. I hope all has a blessed day and everyone does something nice for theirselves.  Keep dry for it looks like rain here. See you lighter. Joanne

Hi Joanne and everyone else:

I think of you and your family often and say a prayer every night that God will help you through this difficult time.  I am going to my support group meeting tonight so if you need anything please let me know as I will be traveling your way.

I was glad to hear about Loretta and that she did well with the surgery!  I am keeping my food journal but I swear I think I am gaining weight not losing it!!!  UGH!!

Take care and again let me know if you need any help with anything! I am just a phone call away.

Good "Hump Day" to everyone!

Driving, working, driving, working, that's all I seem to be doing this week.  Dover is an 70 minute ride from my house and 1/4 tank of gas.  I have no idea why my car is eating the gas this week, but I don't like it one bit.  I did find gas here in Dover for $3.53/gal.  Nothing new or exciting here.  I am enjoying this cooler weather that is for sure, it is nice to sleep with windows open.

Joanne, you know you and your family are in my thoughts and prayers.  Just enjoy the time you have with him and God will take care of the rest.

Joanne,  you are in my thoughts.

I've had a busy week so far, but it's been more fun than anything else.  On Monday, I went to Atlantic City to dance & gamble a little with my friend Kryst.  We got all dressed up and hit the club (Club Worship at the House of Blues, in the Showboat Casino) and danced all night.  I drove home from there, and got home just as my husband was getting out of the shower & getting dressed for work (5:45 am).  Here's a picture of me & Kryst, dressed to kill, before we went dancing:

Dressed to kill

I had a 2-hour nap before I had to go pick up my daughter at my mother's house.  Luckily, my daughter had swimming at her summer camp that she didn't want to miss, so I managed to get in another nap before my afternoon got busy.  I had to clean up the house and cook a big dinner - we had my brother in law over.  I made a roasted leg of lamb (smeared inside & out with a paste made from roasted garlic, fresh garlic, salt, pepper, and Herbes de Provence), mashed potatoes, sauteed carrots, and roasted asparagus with lemon.  My fussy daughter cleaned her plate and asked for more vegetables, please!  Never - and I mean NEVER - has this happened before!  I watched the Olympics after dinner - had to see my gymnastics!

Today was kind of slow.  I did some chores, ran a bunch of errands, shopped on the web, had a nap, and made a big lasagna for dinner.  I made a small one without the noodles for me, since I kind of lost my taste for pasta after my DS.  And here I sit, finally catching up with everyone.

Hope tomorrow's a better day for you!

I made a pot of sauce with hot italian sausage (I took it out of the casing and cooked it, chopping it up with wooden spoons until it was crumbly), and then mixed a 3-pound container of ricotta cheese with 3 eggs, 2 c, of mozzarella cheese, and 1/2 c. of parmesan cheese.

With all of this, plus another bag of mozzarella, I made my family's noodly lasagna, and my noodle-free lasagna.  I just put a layer of sauce, then a layer of the ricotta mixture, a layer of mozzarella cheese, and topped it with sauce.  Then I baked them both for about 45 minutes.

Remember, I had a DS, so I can eat lots of fat - you might want to lighten yours up a little, depending on how well you tolerate the fat (part skim mozzarella and ricotta, and drain the sausage really well before you put it in your sauce).  My husband and daughter had some salad before they ate theirs, too.

Happy cooking!
