Good Morning Delaware ! Life is better this morning in Lower Slower Delaware. I had a really bad weekend with depression and grazing. I went to church yesterday for the first time with out Bob. It was really hard to get thru the service. I prayed with the pastor and another friend who's husband is going thru cancer too after the service. Her husband's name is Bob too. He is starting radiation and could be parilized by the treatment so please keep him in prayer. Today I am starting my logbook back again. I do so much better when I use it. Everything is right there for me to see. I am starting my day with my protein hot chocolate in my coffee. I think I might make a recipe of banana bread from the Make It a Lifestyle Cookbook.It is s/f and no fat. I will let you know how it is at roll call tomorrow. I am brewing some fresh decafe Ice Tea for the family. Lets see if they notice it is decafe. Bet they won't !!!!!  I hope all has a blessed day .  Eat healthy , drink plenty of water, get in some exercise and be good to yourself !  See all lighter. Joanne

I think of you often and I keep you and your family in my prayers.  I hope today will be better for you.
I had a depressing weekend too and that is when I eat all the wrong things.  I really feel alone since I have moved to Delaware and I think that is part of my problem.  I miss my old friends and doing things with them. My husband hasn't had much work lately so money is tight which gets me worried too.  I never left the house over the weekend-not like me at all.  I guess we all have our grazing days.
Anyhow here's to a better day and week!!  Enjoy your peaceful time for the next couple of weeks and try to do "me" things to help you relax.
Next Thursday is my first consultation with Dr. Sonfronski.  Looking forward to it but nervous too. I have been trying to get paperwork together to prove how I have tried to lose weight.

Debbie, Don't sweat it ! All will fall into place. I am looking forward to your appointment too. Can't wait to here what they say. I am looking forward to hearing all about it. I think staying home alot is my problem. I have always kept busy with working, support groups, grandparent's United and doing things with my grandkids. With Bob's illness I am home most of the time and I feel guilty when I leave. I have to get thru this and I will. I have always been a controler and this is something I can not control. I can honestly say this hasbeen the hardest time of my life. If I get thru this I can get thru anything. Today has been a much better day. I am keeping busy. I am going to start counting down to cruise day ( 42 days to go.). See all lighter. Joanne

Good afternoon, Joanne!

I've just spent the morning getting my DD off to summer camp for the day, then connecting with a couple of friends.  I goofed around a bit on the internet, too, and am getting ready to hop on my bike and pedal on over to my brother-in-law's house to bake myself on a raft in his pool.  That bike has been the best purchase I've made this year!

Later, after I pick up my daughter, I'm going to take dinner over to my BIL's house and cook it there (he's recently divorced with an 18 year old son - they appreciate a home cooked meal!).  DH will join us there after work and we'll all eat together.

I found a zucchini brownie recipe that looks pretty good!  It's got fat, but it's canola oil, so it's a good fat.  I'm pretty sure you could make it with Splenda, too, and it would be good.  I'll let you know how it turns out!  My neighbor gave me 3 ENORMOUS zucchini, so I'll have brownies coming out of my ears if the recipe works!!!

Bronwen, Please do share the recipe. If it has zucchini  in it, it's for me. I just love it and could eat it everyday. I cooked zucchini for lunch with boneless,skinless chicken breast. It was so so good.  You can always freeze the brownies but I bet DD and DH will tear them up. See you lighter. Joanne

ZUCCHINI-WALNUT BREAD

Makes 12 servings
Prep time: 15 mins
Baking time: 45 mins

1 slice:
-170 calories
-calories from fat 90
-total fat 11g
-saturated fat 1g
-cholesterol 35mg
-sodium 160mg
-total carbohydrates 17g
-dietary fiber 1g
-sugars 1g
-protein 4g

INGREDIENTS:
nonstick cooking spray
1-1/2 cups all purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1-1/4 cups SPLENDA no-calorie sweetener (granulated)
2 large eggs, at room temperature
1/2 cup unsweetened applesauce
1/3 cup canola oil
1 teaspoon vanilla etract
1 cup shredded zucchini squash
1/2 cup chopped walnuts

DIRECTIONS:

1) Position a rack in the center of the oven and preheat to 350 degrees. Lightly spray the inside of an 8x4 inch loaf pan with cooking spray.

2) Sift together the flour, baking powder, baking soda, cinnamon and salt into a bowl. Beat the SPLENDA and eggs ina large bowl with an electric mixer on high speed until the eggs have tripled in volume and are pale yellow, about 5 minutes. On medium speed, beat in the applesauce, oil and vanilla. Reduce the speed to low, add the flour mixture, and mix just until blended. stir int eh zucchini and then the walnuts. Spread the batter evenly in the prepared pan.

3) Bake until a wooden toothpick inserted in the center of the loaf comes out clean, about 45 minutes. Let cook in teh pan for 10 minutes on a wire rack. invert the loaf onto the rack and let cool completely. Cut into slices and serve.

Says this freezes well. Sounds yummy!

I slept in today. I am going to finish emptying the spare room so my friend can move in probably this week.  Then im gonna take a nap so i can be ready for my fist night back to work.
