Summer Greek Salad  Makes enough for 2 

This is a simple whole meal salad. The addition of greens is your choice. Add a little low-fat feta cheese. I also add beans sometimes. Bumps up the protein. Takes about 15 minutes to prepare. Easy and tastes good on a hot summer night. I will arrange it on my plate so it looks pretty.

Ingredients: 1 tbsp extra-virgin light olive oil 2 tbsp apple cider vinegar or balsamic vinegar 1 clove garlic, minced  2 tbsp lemon 4 cups looseleaf lettuce, torn into pieces 1 cup string beans, steamed until just tender 1 ripe red tomato, cut up 1 hard cooked egg, cut up 1 can white tuna in water, drained 1 oz feta cheese salt & pepper to taste sprinkle of oregano Mix together the olive oil, vinegar and garlic in a small bowl. In a medium bowl, add half the dressing to the lettuce and toss to coat. Divide between two salad plates. Arrange the green beans, tomato, egg and tuna on the greens. Drizzle with the remaining dressing.

Sounds so good !! I have to tell you I really enjoy your recipe post. I still struggle with cooking small amounts and I love the ideal : FEEDS TWO !!!! You don't see that much. Take care. See you lighter. Joanne
