Quick Quesadilla 1 Serving This is a quick fix for mornings when you just can't face another bowl of oatmud or whole grain cereal. These little quesadillas also make good lunches, afternoon snacks or for dinner. As always, you can alter the nutritional content by adding in any finely chopped vegetable or a handful of baby spinach leaves. Ingredients: 1 egg 1 ounce grated low-fat cheddar cheese 1 tablespoon salsa 1 small flour tortilla (preferably whole wheat) a slice of jalepeno if you like it hot Instructions: Preheat the oven to 350 degrees. Scramble the egg quickly in a small skillet. Fold in the salsa and cheese. Put the tortilla on a lightly oiled cookie sheet. Put the egg mixture on one half and fold over the other half to cover. Bake for 5 minutes or until the tortilla is crisp. Nutritional Information: Per serving: 234 calories 12 g total fat (5 g sat) 202 mg cholesterol 18 g carbohydrate 15 g protein 1 g fiber |

Thanks for the recipe. Before surgery, I used to love the breakfast buritto at McDonalds.
This is a much healthier version and it sounds delicious too!

How are you doing? I was sorry to read about your mother. How is she doing? Did you enjoy Canada? Hope this week is better for you.

Hi Linda, yes like McD's without the little round sausage balls.
Canada was beautiful. 1000 Islands area. Cept I worried about my Mom. She was at a skilled health care facility. My Mom ended up with a UTI and a blood clot in her leg. She was dismissed from Christiana last Tuesday and is at Forwood Manor for rehab and therapy. The blood clot was found on Thursday night. at Forwood. Thank God. WOW what a week. Hopefully she can come home next week. She is not a good patient. Never been in a hospital and doesn't know why she is there. They won't let her up much til the clot disipates.
How goes it with you? Found out anything else regarding your health issues? You are in my prayers too GF.

Hi Elissa,
I just heard from the Doctor and I am having surgery to remove the cyst next Thursday (June 7th).
I may or may not becoming home the same day. If they find nothing I will be home same day but if they find cancer they will do a more extensive surgery and I will be in the hospital for 2 -3 days.
I am cautiously optomistic that I will be home and that they will find no cancer!
I hope to be at PMRI on Monday the 4th, hope to see you there.
