Black Bean & Corn Salad

This is a very easy bean salad you can make the night before and take to work, or serve as a side dish. I made the salad for the Healthy Beginnings meeting last week. It's full of color, taste & protein. Enjoy. ((HUGS)) Elissa Ingredients: 1 lg can black beans 1 bag of Trader Joe's white corn (frozen) 1/2 cup chopped vidalia onion 2 tblsp extra-virgin olive oil 3 tblsp apple cider or red wine vinegar salt, pepper & oregano to taste Instructions: Drain the canned beans and rinse well in a strainer. Make sure you've drained off all the water. Add the beans, corn, and spices. The corn will thaw within an hour. Whisk the oil and vinegar together then add. Refrigerate til ready. You can experiment with other beans and vegetables to suit. Nutritional Information: 1/2 cup serving approximately 150 calories .5 g total fat (0 g sat fat) 0 mg cholesterol 20 g carbohydrate 7 g fiber 100 mg sodium 4g sugar 10 gr protein

Sounds really good and healthy. You always have such good recipes. Could you pass on somemore. My daughter and I are putting together a recipe book for our group in D.C. Alot of people there struggle with getting in protein since our Drs don't beleive in protein supliments. I will put your name by any submission with your permission. It was nice seeing you Tuesday.
