YUMMY Legal Cheesecake Recipe
NY Style Cheesecake
With nut crust
Note: If you have problems with fat, substitute accordingly
PIE CRUST
INGREDIENTS
8-10 oz. Almonds or walnuts
1 stick butter melted
1-2 Tbls. Splenda
DIRECTIONS
Work all ingredients together to make a paste in food processor.
Put aluminum foil on OUTSIDE BOTTOM of 9-10Ó Springform pan.
Cook in oven for 10 minutes at 250¡
Remove from oven and let cool.
CHEESECAKE
INGREDIENTS
Five 8oz packs of cream cheese (room temperature works best)
1 cup Splenda
3 Tbls. flour
5 large eggs (4 extra large eggs)
1 Tbls. lemon juice
2 Tsp. Vanilla
1/4 cup (liquid) either milk or heavy cream or 1/2 & 1/2
DIRECTIONS
Mix in electric mixing bowl for best results.
Beat cream cheese and eggs first.
Leaving mixer going on lower speed (2) add the following ingredients in order and mixing between adding each item:
Splenda
Flour
Vanilla
Lemon Juice
1/4 cup liquid of your choice (last in)
Make sure it all mixes together to a creamy consistency (no lumps!)
Add mixture to "cooled" pie crust.
Bake for 15 minutes in oven @ 500¡
Turn oven off and let sit (in warm oven) for 1 hr.
NOTE: If the top appears to be getting too dark, just lightly lay a sheet of tin foil on the top.
Refrigerate for 24 hrs before cutting.

My daughter made it for ME for as part of the Christmas breakfast gathering.
I was in heaven.
The crust tastes like a linzer tort. YUM...
Still...it does have many more calories than we usually bring in...
so prudence upon continued consumption!
For this puppy, it's back to food basics today and exercise schedule tomorrow!
It was fun though... enjoyed each and every bite of yumminess much more than before my surgery.
