shrimp recipes
If you like a little spicy then this Poblano Shrimp is very tasty.
1 tbs olive oil
1 pound shrimp or scallops if you prefer
1/2 tsp chili powder
1/2 tsp cumin
1 small poblano pepper, diced small
1 cup diced tomato
1 tsp chopped garlic ( or more to your taste)
1/4 cup white wine ( original recipe includes this. I exclude it)
2 tbs lime juice
1 tbs fresh cilanto
salt & pepper to taste
Add olive oil to large saute pan over medium-high heat, season shrimp with chili powder and cumin, when oil is hot saute shrimp a few minutes on each side, add poblano pepper, tomato, garlic and saute for 2 minutes, add wine to deglaze pan (I skipped this step), add lime juice and cilantro. Serve
Nutrition info assumes 4 servings, 170 calories, 5g fat, 20 grams protein.

I make Zatarains Jumbalaya with raw shrimp (don't put the shrimp in until the last ten minutes or so) but don't eat much of the rice..I add two pounds of shrimp and feast on those...yummy!
