My friend who have diabetic shared her recipes with me. I tasted what she made. They were good!
Macadamia turkey salad on cucumber slices
1/2 cup finely chopped cooked turkey or chicken (about 3 ounces)
1/2 of a small apple, chopped (1/3 cup)
2 tablespoons low fat mayonnaise
1 tablespoon mango-chutney (snip large pieces)
1 tablespoon snipped fresh chives or sliced green onion
1/2 teaspoon grated fresh ginger or 1/8 teaspoon ground ginger
1/4 cup chopped macadamia nuts, cashews, or peanuts
24 1/4 thick cucumber slices
1. In a small bowl, combine turkey, apple, mayonnaise, chutney, chives and ginger. cover and chill for 2 hours
2. Before seerving, stir half of the nuts into turkey mixture. To Serve, spoon a little turkey mixture onto each cumcumber slice. sprinkle with remaining nuts
Walnut Feta Yogurt Dip
4 cups plain low-fat yogurt* (use yogurt without gums, gelatin or fillers that can prevent curd and whey from separating)
1/2 cup crumbled feta cheese (2 Ounces)
1/3 cup choped walnuts or pine nuts, toasted2 Tablespoons snipped dried tomatoes (not oil-packed)
2 teaspoons snipped fresh oregano or marjoram or 1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon ground black pepper
walnut half (optional)
1. For yogurt cheese, use a yogurt strainer or line sieve or small colander with 3 layers of 100 percent cotton cheesecloth or a clean paper coffee filter. with strainer over a med. bowl, spoon in yogurt. cover with plastic wrap. Chill for 24 to 48 hours
2. Drain yogurt; stir in feta cheese, chopped nuts, tomatoes, herb, salt and pepper. Cover; chill until serving time. you cna put top with walnet half
