Recipe: Oatmeal Cookies

Now I know most of us do not indulge , or should. But my daughter makes these for the family. Low in carbs and good protein. One fills me when I have one. They are to die for, some ingredients are tougher to get, but I know where to get them now. 1 cup coconut oil (health food store, not what you think) 1 cup butter, softened 1 1/2 cups Splenda 1 tsp. molasses 2 eggs 1 cup ground almonds (trader joe's carries this) 1 cup vanilla flavored whey protein powder 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cinnamon 1 cup rolled oats (not quick oats) 1 cup chopped pecans Preheat oven to 350 degrees. With electric mixer, beat together coconut oil, butter, and Splenda until well combined, creamy and fluffy. Beat in the molasses and eggs, combining well, followed by the ground almonds, protein powder, salt and baking soda, scraping down the sides of the bowl a few times and making sure the ingredients are well combined. Beat in cinnamon, rolled oats, and pecans. Spray a cookie sheet with nonstick cooking spray, and drop dough onto it by the scant tablespoonful, leaving plenty of room for spreading. Bake for 10 minutes, or until golden brown. Transfer cookies carefully to wire racks to cool. Makes about 5 dozen cookies, each with 3 grams carbs, trace of fiber and 4 grams of protein. I don't know the calorie content, but it can be figured out. Enjoy! Pam

Hi Kathy, Maybe I should! I am always trying new recipes, the family is getting bored with the same things since I cook more now. I am trying to get them on the low carb bandwagon. These are good cookies because my youngest will only eat about 3 of them instead of 10 or more of other cookies. These must fill her up. I will look for more recipes! Pam
