No Noodle Lasagna Recipe
Okay Joanie, here it is:
1 lb. ground beef
1 cup low-carb spaghetti sauce (carb solutions or Ragu are low)
1 can sliced mushrooms (4 ounces)
1 cup ricotta cheese
1 egg, beaten
1 1/2 cups shredded mozzarella cheese
1/2 T Italian seasoning
20-25 slices pepperoni
Preheat oven to 350 degrees. Brown ground beef and drain off fat. Add spaghetti sauce and mushrooms and simmer 10 minutes.
In a small bowl, mix ricotta, egg, 1/4 cup mozzarella, and italian seasoning. Beat well. Grease an 8x8 inch glass baking dish with nonstick cooking spray. Spread the beef mixture in the bottom of the dish. Spread the ricotta mixture on top of the beef mixture. Lay half the pepperoni slices on top of the ricotta mixture. Put remaining shredded mozzarella over the pepperoni slices, and lay the remaining pepperoni slices on top of the cheese. Bake until bubbly about 20 minutes.
Yield: 4 servings with 9 grams of carbs, 3 grams fiber, and 43 grams of protein. I don't know the calorie content, but it can be figured out.
I omitted the shrooms, don't like fungus. And the recipe says you can add in some Parmesan cheese with the Ricotta, and can add a layer of Spinach.
