Yummy Stuff
Hi Everyone
I just had to share this recipe - it was fabulous, and my whole family enjoyed it. High protein, low fat, ideal for soft food stage, yummy. I have no idea where I got the recipe from - it may have been from this board
- don't mean to steal someone else's recipe, but this is worth trying.
4 beaten eggs
1/3 cup unbleached all-purpose flour
1/4 teaspoon black pepper
1/8 teaspoon salt
1/8 teaspoon chili powder
1 1/2 cups fat free cottage cheese
2 cups of fresh baby spinach (not cooked)
1 small onion - diced (I used frozen diced onions)
1 cup crumbled feta cheese
1 cup shredded cheddar cheese
Spray a 9 inch pie plate with Pam. Bake at 350 for 45 minutes - let cool 5 minutes.
So - I was thinking, lets post some of our favorite recipes here today. I know that Kathy K posted a Greek Chicken recipe on the food log - any others????

A really easy and yummy treat which can easily be modified for anyone plus it's high in protein!
Mini Cheeesecakes
2 pks cream cheese (reg, or LF work best)
2 eggs
1 cup splenda
Beat together until smooth and pour into lined cupcake/muffin pan. Bake at 350 for 20 mins....
Add "crust" w/ a vanilla wafer on the bottom...
Add some fruit to the top....
