need soft food recommendations
Hello all,
If I eat another string cheese I'm going to hurl!
In all seriousness, the gastro doc wants me to remain on soft foods until he can fix the stricture (after my ulcer heals), so I've got another month to go.
I cannot tolerate eggs, they get stuck, even when I chew and chew.
Mostly, my food intake consists of 1 string cheese a day, dipped in mustard, and a couple of ounces of pudding. Sometimes I have a few Ritz crackers (I need something to crunch, if even for a moment). I also like Campbells pea soup, which has a ton of protein.
Ricotta and cottage cheeses are tolerable, too. But I'm wondering, anybody out there have anything else they can recommend? I dress up the cottage cheese with salsa, but need some other recommendations. Your help is appreciated.

I stocked up on all the 98 per cent fat free soups....tomato, cream of
chicken, cream of broccoli. I loved the bookbinders lobster bisque a bit
pricy but really good. I added different spices to the campbells soup
dill to the tomato....a little garlic here a little curry powder there...
melt a string cheese in your soup....gives you a little more protein.
progresso has some good soups....lentil, escerole(sp?) onion(good with
string cheese)
soy chips are good too they give you something to crunch but they melt
in your mouth and have a lot of protein.
I used one cup of ricotta (instead of milk) in my sugar free pudding...
makes a thick mousse type dessert and you can use any flavor pudding

I remember those days. I know it's hard. One thing I absolutly loved was Ricotta cheese mixed with a little bit of sauce (pasta sauce, homemade or jar is fine) and some string cheese. I use to heat it up in the microwave , stir it all together and Yummmmmy. Was like a stuffed shell without the pasta.
Any kind of low fat cheese is good. You don't have to stay strictly with string cheese. I like the 2% Cracker Barrel Sharp cheddar kind.
Ricotta Crem
1/2 cup park skim ricotta cheese
1/4 teaspoon vanilla extract
1 package splenda
mix together and served chilled
(you can also add unsweetened cocoa)
Very Yummy and has about 14 grams of protein
I also recently tried the Carb COuntdown Yogurt Smoothie that is awesome.

So happy to hear you are ok!! We were so worried about you! Can you tolerate Wendy's chili? I loved that. Also drank a lot of V-8 juice. I also dipped Stella Doro bread sticks in cream cheese. The bread sticks are pretty low in carbs and crunchy too.
