Spinach Gratinee Recipe

Here it is... this recipe is from the weigh****chers cook book 1 tbsp plue 1 tsp of margarine divided 1/2 cup chopped onion 1 small clove garlic, minced 3/4 cup part skim ricotta cheese 1/4 cup grated Parmasean cheese 1 egg beaten 1/8 tsp pepper 4 cups cooked fresh cooked spinach well drained and chopped 3 tbsp plain dried bread crumbs Preheat oven to 375, in 8 inch skillet heat 1 tsp marg over medium high heat until bubbly and hot. Add onion and garlic, saute until soft. Transfer to a mixing bowl; add cheeses, egg and pepper and mix well. Add spinach and combine well. Add mixture to 1 quart casserole and spread evenly. Set aside. In skillet melt remaining tbsp margarine. Add bread crumbs and stir to combine. Sprinkle crumbs over spinach and bake until topping is browned and mixture is heated. (30- 45 minutes) Makes 4 servings Nutrional values 208 calories 15 grms protein 11g fat 15 carbs I make changes to this recipe... ie egg beaters, and reduced fat parmesan! I also find that I don't use as much margarine in the topping mixture. This drastically reduces the ammount of fat in this recipe. Also you can add chopped chicken to the skillet when saute the onions for a complete meal. It's sooo good!!!

Sounds yummy! Thanks for sharing this. I like the idea of adding some cooked chicken - since I have so much turkey leftover - I think this would be a nice treat. God Bless, Kathy Bilodeau

Rebecca, This sounds awesome. I will definitly be trying this recipe out very soon. Do you know if it freezes well? I have been looking for different ways to cook spinach she it's loaded with iron and my levels are off. Thanks for the recipe. ~Julie~
