Cottage Cheese Flans - Recipe
Hi All,
Made a recipe that came out pretty good...
1 Cup Fat Free Cottage Cheese
3 whole eggs or equiviliant in Egg Beater product (I used Egg beaters)
1/4 low fat shredded cheese divided
Seasonings to your taste such as chives, S&P, onions etc...
In blender mix Cottage Cheese & Eggs until smooth.. add seasonings of your preference & 1/2 of the shredded cheese - Mix in blender for a few seconds until items are mixed thoroughly.
Transfer liquid product to greased (I used cooking spray) flans....
I used muffin tins.. worked ok.
Top with remaining shredded cheese
Cook at 425 for about 40 minutes or until fluffy & brown
Serve immediately.
These little guys "puffed" right up.. however I noticed with the muffin tins they deflated a little.. but still VERY Yummy...
Low fat, Low in Carbs, & very High in protein.

Hi Sue,
I'm feeling better.. the meds have really helped with the recovery.. I'm still sore on one side of my incision.
Went back back to the gym to start some cardio & light weights to get toned up again.. nothing too heavy.. Just get tuckered out very quickly.. I think my stamina is going to take a while to come back.
No "core" work to the mid-section probably another month of healing or so.
Eating is still a struggle.. anything harder than chicken or turkey & it sits like a rock or I throw up. Almost like being at stage 2 with eating WLS.
Dr R wants me to avoid starchy carbs like white rice, potatoe etc... I couldn't tolerate them before so it's not a problem.. he says it causes diarria especially if my system is compromised like it is right now..
Throwing up has been off & on... so between that & having almost chronic diarria.. it really deters me wanting to eat.. been getting creative with protein shakes & I'm enjoying them. (for now)
I go back to Dr. R on 6/4 so will see what he thinks. Definately lost a few more pounds... just trying to keep the protein levels up where he wants them.. that's always a struggle.. but don't want to lose my hair again.. just got it back to "full strength" a year ago..

Glad you are feeling better. Diarria is better than constipation, but a sore bum is a sore bum. I am hoping to get back to the gym soon myself. I pulled a muscle in my stomach and then once that healed is when I had my 6 weeks of sickness and couldn't do a dang thing. Now the dog-ter is sick and i have to rush home from work to let her out so she doesn't pee all over the house.
I shall now be know as Hagatha: Queen of the queens.
