Thursday-What are We Eating

This is my day off...I am planning lots of cleaning...and some cooking. I am going to make a chili and freeze it..then figure out the nutrition content. I am also going to make some chicken for me to take for lunches over salads. This morning I tried a low carb/fat free bagel..because I was hankering for some crunch. It was a roasted onion bagel with 110 cal and SIX grams of protein. I could not eat the entire thing..had 3/4 of it...and it was pretty good. B-Bagel low carb/ff low fat cream cheese 2 tsp S-protein shake L-chicken 2 oz...salad...lite dressing Snack-protein bar Dinner-Chilli Water...I need to reach my goal today!! Joanie

Joanie, Sounds like a lot of healthy choices today. I like the way you allowed a bagel but chose one with low carbs and added protein. What are you putting into your chili? Good luck getting tha****er in. Terri

ground turkey...Ortega seasoning...salsa and beans! I am going to be a chemist this afternoon and see if I can figure out how to divide this up! I want to put it in my custom foods at fitday.com Joanie

Breakfast - 1 string cheese - Dexatrim All-In-One Protein Bar - Small Clementine Lunch - Wendy's Chili Snack - 1/4 cup almonds Dinner - Tuna Taco (tuna mixed with salsa, cole slaw veggies, and fat-free sour cream on a whole wheat low carb tortilla). Doesn't sound good - but it is, the whole family enjoys them. I'll probably have 1 taco with extra filling. Snack - Sugar Free Jello Ambrosia (ff cool whip, ff cottage cheese, sf jello, fresh fruit, and chopped walnuts) Hope everyone has a great day. Kathy Bilodeau

That sugar free ambrosia sounds great!! I am going to see if I can find the recipe on the web Kathy or else I will be emailing you for the recipe! Tuna taco sounds interesting too. I did something new yesterday. I marinated boneless chicken in ff salad dressing overnight and baked it with a few bread crumbs sprinkled on it...I cut them in small strips first. I microwave the cooked chicken with a small sprinkle of low fat cheese and then top it with salsa (I love the southwest kind--with beans..2 tbsp even has 1 g of protein!) and dip it in lite sour cream! High protein and very little carb! Joanie

Hi Joanie, I do a salsa chicken regularly - I put the chicken breast in the crock pot - add losts of salsa and simmer all day. The chicken falls apart and everyone loves it - yummy. I've never added cheese and sour cream though - that sounds great too. The ambrosia is really easy - 12 oz fat free cool whip; 16 oz fat free cottage cheese, 1 pkg sugar free jello (dry), and any kind of fruit you want. I've used lime jello with fresh sliced strawberries and crushed pineapple; I've used peach jello with fresh raspberries and chopped walnuts; and orange jello with mandarine oranges, pineapple chunks and walnuts (I love nuts so I add them to everything). Someone brought this ambrosia thing to one of our get-togethers - I've been making it regularly ever since! Have a great day. Kathy Bilodeau
