Hi all, There was a lot of interest in my "what are we eating" posts last week, but some may have found it difficult to post everything they ate each day. So, I have another idea. Beth Farbotka gave me this idea -- she replied to my Friday post: A whole wheat low carb tortilla with a scrambled egg with salsa mixed in it and than topped with low fat shredded cheese - it was excellent. It sounded great, so that's what I had for breakfast today. It was wonderful, and quite satisfying! Thanks for the hint Beth. God Bless, Kathy Bilodeau

Hi Kathy, Since I am STILL on pureed foods, I won't have anything interesting to post, until after the 16th when I progress to soft and regular foods. But, I wanted to say I think that is a great idea. The idea you posted with the scrambled egg in a tortilla sounds soo good!! I will try that first thing, when I am allowed of course. Can't wait to see other suggestions! Great idea. Anne

A nifty idea, Kathy! I just finished a cup of low-fat cottage cheese with cinnamon and dried apple slices. It's best if you make ahead of time and let the apples soak up some of the moisture. If I'm craving something VERY sweet I'll sprinkle some Splenda over it. Bon appetite! -Deb

Kathy, I can't tell you how much I enjoy this post. Yesterday morning I made a quiche. Aside from my family having a good breakfast, I have something healthy to have, too. I use a ready made pie crust (I actually don't eat that part) 5 eggs mixed w/ a little 1/2 and 1/2 lots of thawed frozen spinach, a little salt, pepper and onion powder and some low fat chedder cheese. Bake at 425 for 30 min. It really is easy, and a warm sliver in the a.m. is a good protein boost. Dee
