Green bean (asparagus), red pepper & chicken (potato) salad The Veggies 1 # green beans or asparagus 1/2 large red bell pepper seeded 1/2 c slivered red onion Chicken 1 # cooked chicken cut up into small pieces (original recipe called for 1 pound of new red potatoes) Dressing 5 tbl creole mustard (preferably Zatarans) or spicy brown mustard 6 tbl balsamic vinegar 1 1/2 tbl brown sugar (twin brown sugar) 3/4 tsp kosher salt 1/4 tsp black pepper 1 clove garlic pressed or finely minced 6 tbl olive oil Tabasco Sauce Cook green beans or asparagus in salted water until tender crisp. Drain and shock in cold water. Slice into 1 1/2 inch pieces. Cut pepper into sticks about same size as beans. Put in bowl and add onion. Add cooked chicken. Mix up dressing by stirring together the mustard, vinegar, brown sugar, salt, pepper and garlic in a small bowl. Drizzle in the oil, whisking constantly to make a creamy dressing. Add a couple of dashes of Tabasco Sauce to boost flavor if desired. Splash dressing onto the mix and give a good stir. Feeds 5-6.
