Chocolate Chip Mini Cheesecakes/And a Thank you to Kathy B

Hi Everyone I wanted to add to the rest of your comments on what a wonderful time i had saturday at the get together and thank you to kathy b for coming up with the idea and putting it together.. i cant wait till the next one we plan. I was really nice to meet everyone. Here is the EASY recipe for the mini cheesecakes i brought **here are the ingredients: 12 oz cream cheese 2 eggs 1 cup splenda 1 tbsp of margarine 1/2 package of sugar free shortbread cookies-(the brand i used was murrays and they are in the cookie aisle of the grocery store) first..... a package of sugarfree shortbread cookies crush about 1/2 the package and melt the 2tbsp of margarine and mix with the cookie crumbs and just cover the bottoms of the cupcake/mini cupcake wrappers and pat it down so it sticks together. then in a separate bowl mix the cream cheese, eggs, and splenda together till its creamy. you can then add in some sugar free chocolate chips (found at bariatriceating.com) or they taste delicious without them or even with some fresh strawberries cut on top. then pour the mixture on top of the crumb bottom and cook for 20 minutes at 350. i am glad everyone enjoyed them. three words- TO-DIE-FOR. Thanks for posting this, so that we didn't have to hunt you down and tie you up to get the recipe. ( I swear we would have, if we had to!)
